Freeze-dried Chicken Tacos with BBQ Sauce

Ingredients

  • 1 cup freeze-dried chicken, rehydrated and drained
  • Grape seed oil
  • 2 corn tortillas, toasted as per instructions.
  • 2 tablespoons butter
  • 1/4 cup barbecue sauce
  • 1 slice sharp cheddar cheese, halved
  • 1 green onion, minced
  • 1 large romaine leaf, sliced finely

Instructions

  1. Place 1 cup of freeze-dried chicken in bowl, cover with boiling water, and cover. Drain after chicken is rehydrated (takes about 5-6 minutes).
  2. Make barbecue sauce by mixing ingredients below in a bowl.
  3. Spray pan and/or tortillas with oil. Over medium high heat, toast corn tortillas lightly. Remove from pan.
  4. Melt butter in pan. Add chicken and cook for 2-3 minutes. Add 1/4 cup of barbecue sauce and mix well.
  5. Divide chicken into two parts and place half slice cheese on each.
  6. Slide chicken “patties” onto tortillas. Place green onion and lettuce on top, and drizzle with remaining barbecue sauce.
  7. Other garnishes could include sour cream, lime juice, hot sauce, salsa, white onions, etc. according to your tastes.
  8. Serve warm.
  9. Barbecue Sauce Ingredients
  10. 2 tablespoons cider vinegar
  11. 2 tablespoons Worcestershire sauce
  12. 1/2 teaspoon garlic powder
  13. 1 teaspoon onion powder
  14. 1 teaspoon kosher salt
  15. 2 tablespoons light brown sugar
  16. 1 tablespoon molasses
  17. 1/2 cup ketchup
  18. 2 tablespoons pureed chipotles in Adobo sauce
  19. 1 teaspoon Dijon mustard
  20. 1 teaspoon Maggi seasoning
